COOKING EGUSI SOUP (MELON SOUP)- AFRICAN DISH.


Egusi soup is a kind of soup thickened with the ground egusi seeds. Besides the seed, water, and oil, egusi soup typically contains leaf vegetable s, other vegetables, seasonings and meat

Ingredients:
Fresh or frozen meat e.g chicken, fish, steak, snail, shrimp, smoked fish etc, palm oil, diced onions, diced tomatoes, a pack of frozen spinach or collard green, salt, cayenne pepper, knorr beef bouillon seasoning and groung egusi.

Method:
Use a pot to heat the palm oil, clean the stock fish and boil in another pot with onion till soft. Add the meat to it and allow it to boil for 30minutes, then add onions, pepper, seasoning, grinded melon and crayfish to the heated oil and allow steaming for 2minutes.
Pour in the cooked ingredients into the friedd ones and allow boiling for 10mins. Add pumpkin leaves or water leaves and salt to taste and allow simmer for 5mins.
